Chef
Denis Noeser's local-produced predicated cuisine alters with
harvests but his cooking is reportedly always at a very high
level ...
Tender meats,
game, fish and fresh fruits have since a long time seduced all
"haute cuisine" connoisseurs, especially that Chef
Denis' cooking is prepared with wine, cider and vinegar
produced right here in Quebec.

From
time to time you will find exquisite "biscuits" of
lobster mousse and scallops; ground lobster meat and its red
roe served in a velvet pool of dill-perfumed cream; stew of
tender, young rabbit with an aromatic mirepoix of absolutely
fresh summer vegetables, bundled in filo and crisply baked;
sweet ostrich filets in their own soft flavour eagerly
marrying a deeply dark cassis vinegar fortified demi-glaze;
baked terrine of brie with walnuts; chocolate - pistachio -
hazelnut
triple-mousse layer cake and much more !
CHEZ NOESER is
always full of surprises. Ginette and Denis will surprise you
with new ambience, new menus and lots more ! In summer, those
fabulous meals are served in the exquisite exotic
terrace/garden. Every few minutes, an
"herbier" plucks a few sprigs of chervil and
tarragon to garnish the plates that are ready to go out ...

found a very original way to present its clientele with
monthly menus designed around a special theme.
